
I love food! I love to cook, bake and consume all types of food. Lately I have been making menus for the week and then doing one big shopping trip and it works great. I have been making a huge list of meals that we like and are pretty easy, so when I go back to work I don't have to think too hard. I can just look at the list and pick some meals for the week. I have noticed that my list is a little stale. I need some new and exciting recipes that aren't too hard to make and don't cost too much money to assemble.
With that being said I call for your help and expertise. Since most of you who read my blog are preparing food for you and/or your families I want to know your favorite recipe. I would love to have the recipe if you want to take the time to leave it or at least describe the dish so I can assemble it.
I will share my favorite dish.
Crock Pot Curry Chicken
2-4 Boneless/Skinless Chicken Breasts (frozen works)
4-6 red potatoes, washed and chopped (leave the skin on)
2 cups baby carrots
1 medium red onion, chopped
1 Curry Brick, medium heat (on the asian aisle at Winco), roughly chopped
1 (14 ounce) can Coconut Milk (low fat)
Wash and chop the red potatoes while leaving the skin on. Chop one medium red onion. Remove the curry brick from box and roughly chop.
Lightly spray the crock pot with non-stick spray. Layer chicken, carrots, potatoes and onion in the crock pot. Sprinkle the curry brick throughout the layers and then dump the coconut milk over the top before putting the lid on.
Cover and cook on high heat 6-8 hours or on low heat 10-12 hours. (frozen chicken)
Cover and cook on high heat 3-4 hours or on low heat 6-8 hours. (fresh chicken)
Serve with Basmati, or your favorite, rice.

Okay I have so many easy ones I do not even know where to start! But first I just found an old notebook from some club we used to have and I must have been mad at you because you were my 5th best friend and you had a big X through your number-- I think it was either when we had that club in Jana's playhouse or in that wierd room under my stairs at the Chylene house. We were crazy!
Okay one of my absolute favs easy easy recipes is:
GREEN CHILE BURROS
-1 pork shoulder roast or a couple chicken breasts (I always use chicken)
-1 can of pinto beans drained
-505 green chile sauce (I buy it at walmart and I have seen it at sprouts so I think it is everywhere)
Throw it in the crockpot on low and cook all day then shred the meat.
Eat in tortillas with cheese and sour cream and whatever else you want.
Another easy one is just cooking chicken in your favorite salsa all day in your crockpot then shred it and eat in tortillas with all the fixins you like.
EASY TACO SOUP
1/2 lb ground beef (cooked)
1 can corn
1 can red kidney beans
2 cans stewed tomatoes (blend one of the cans in your blender)
2 T taco seasoning
Don't drain anything just throw it all in a pot and simmer for about an hour before serving.
Okay I know those were all mexican recipes- what can I say I am married to a mexican :) If you want more I have tons!

Okay, this may sound really pathetic, but one of my favorite things to make lately is little pizzas with Rhodes Roll dough. You just thaw them like normal, then you make them into little pizzas with whatever you want. CJ and Max love them (but they're not too hard to please). You're much more gourmet than me!
Have you heard of allrecipes.com You can find a ton of recipes and if you sign up for free you can have a on line recipe box. I think but have not tried it yet that you can print of shopping lists.
Also if you have a BBQ I have a couple of good recipes. Let me know.
